Mushroom Soup

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 lb mushroom
  • 2 tablespoons sherry wine or 2 tablespoons brandy
  • 2 garlic cloves
  • 1 medium onion
  • 1 quart chicken stock
  • 1 cup heavy cream
  • salt and pepper

Recipe

  • 1 slice onion and mushrooms. fry in butter.
  • 2 crush garlic, and add to pan. stir.
  • 3 add sherry and chicken stock.
  • 4 bring to boil and simmer about 15-20 minutes.
  • 5 taste for seasoning.
  • 6 add cream (make sure it doesn't curdle).
  • 7 simmer another 10 minutes.
  • 8 blend and serve.
