Potato Soup On A Whim

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 -6 medium potatoes, peeled and cubed
  • 1/4 cup celery, chopped
  • 1 carrot, chopped
  • 1 onion, chopped
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 2 (14 ounce) cans chicken broth
  • salt and pepper
  • nutmeg

Recipe

  • 1 combine the chopped potatoes, celery, carrot, and onion into a large pot.
  • 2 add the cream of chicken soup, and enough chicken broth to cover all the vegetables (about 2 cans).
  • 3 add salt and pepper to taste, and sprinkle lightly with nutmeg.
  • 4 bring pot to a boil.
  • 5 turn the flame down and let simmer for 20 minutes or until potatoes are tender. stir occasionally.
  • 6 turn off the flame and remove the pot to a cool burner (or counter) and mash the potatoes in the pot (be careful and the pot will be hot).
  • 7 serve and enjoy.
