Potato Soup On A Whim

Ingredients

- 4 -6 medium potatoes, peeled and cubed
- 1/4 cup celery, chopped
- 1 carrot, chopped
- 1 onion, chopped
- 1 (10 1/2 ounce) can cream of chicken soup
- 2 (14 ounce) cans chicken broth
- salt and pepper
- nutmeg
Recipe
- 1 combine the chopped potatoes, celery, carrot, and onion into a large pot.
- 2 add the cream of chicken soup, and enough chicken broth to cover all the vegetables (about 2 cans).
- 3 add salt and pepper to taste, and sprinkle lightly with nutmeg.
- 4 bring pot to a boil.
- 5 turn the flame down and let simmer for 20 minutes or until potatoes are tender. stir occasionally.
- 6 turn off the flame and remove the pot to a cool burner (or counter) and mash the potatoes in the pot (be careful and the pot will be hot).
- 7 serve and enjoy.
