Quick & Creamy Potato Soup

Ingredients
- 6 slices bacon, chopped
- 1 small onion, chopped
- 2 1/2 cups cold water
- 1 (5 3/4 ounce) package au gratin potato mix
- 2 cups cold milk
- 1 tablespoon chopped parsley
- 1 dash black pepper
- 2 green onions, finely chopped (optional)
Recipe
- 1 cook bacon & onions in 3-qt saucepan. drain & remove.
- 2 add water to saucepan; bring to boil. add potatoes.
- 3 simmer over med heat 18 minute.
- 4 stir in the sauce mix that comes with the potatoes, milk, parsely, pepper, bacon and onions.
- 5 simmer for 4-5 more minutes; uses spoon or spatula to chop potato pieces while stirring.
- 6 garnish with chopped green onion if desired.
