Quick & Creamy Potato Soup

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 6 slices bacon, chopped
  • 1 small onion, chopped
  • 2 1/2 cups cold water
  • 1 (5 3/4 ounce) package au gratin potato mix
  • 2 cups cold milk
  • 1 tablespoon chopped parsley
  • 1 dash black pepper
  • 2 green onions, finely chopped (optional)

Recipe

  • 1 cook bacon & onions in 3-qt saucepan. drain & remove.
  • 2 add water to saucepan; bring to boil. add potatoes.
  • 3 simmer over med heat 18 minute.
  • 4 stir in the sauce mix that comes with the potatoes, milk, parsely, pepper, bacon and onions.
  • 5 simmer for 4-5 more minutes; uses spoon or spatula to chop potato pieces while stirring.
  • 6 garnish with chopped green onion if desired.
