Simple Mulligatawny Soup

Ingredients

- 2 tablespoons margarine
- 8 ounces potatoes, pared sliced
- 1 small apple, pared cored and sliced
- 1/2 cup onion, sliced
- 1/4 cup carrot, sliced
- 1 tablespoon curry powder (to taste)
- 2 teaspoons tomato puree
- george washington golden broth and seasoning
- 1 1/2 cups beef broth
- 1 lemon, juice of
Recipe
- 1 melt margarine in sauce pan.
- 2 add potatoes, apple, onion, carrot, curry and tomato puree.
- 3 cook about 5 min or until barely colored.
- 4 add broth made from packet of broth & seasoning mix and beef broth.
- 5 cook covered about 45 min or until vegetables are tender.
- 6 stir in lemon juice.
