Simple Mulligatawny Soup

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 2
  • 2 tablespoons margarine
  • 8 ounces potatoes, pared sliced
  • 1 small apple, pared cored and sliced
  • 1/2 cup onion, sliced
  • 1/4 cup carrot, sliced
  • 1 tablespoon curry powder (to taste)
  • 2 teaspoons tomato puree
  • george washington golden broth and seasoning
  • 1 1/2 cups beef broth
  • 1 lemon, juice of

Recipe

  • 1 melt margarine in sauce pan.
  • 2 add potatoes, apple, onion, carrot, curry and tomato puree.
  • 3 cook about 5 min or until barely colored.
  • 4 add broth made from packet of broth & seasoning mix and beef broth.
  • 5 cook covered about 45 min or until vegetables are tender.
  • 6 stir in lemon juice.
