Portuguese Caldo Verde

Ingredients

  • Servings: 10
  • 1 lb kale
  • 1/3 lb dried small beans, soaked in water overnight and drained
  • 1/2 cup olive oil
  • 3 medium onions, peeled and thinly sliced
  • 3 quarts chicken stock
  • 1/2 lb linguica sausage (portuguese sausage)
  • 1/2 lb potato, peeled and grated
  • salt and pepper

Recipe

  • 1 remove the large ribs of the kale and slice the leaves into very thin strips, as thin as possible.
  • 2 place in a bowl of cold water for 1 hour. drain well.
  • 3 in a 8 qt soup pot, saute the onions in the olive oil.
  • 4 add the kale, chicken stock and remaining ingredients, including the drained beans.
  • 5 simmer for 1 1/2 hours, covered.
  • 6 taste for salt and pepper before serving.
