"fabulous Italian Scapel Soup"

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 3
  • 1 1/2 cups cold water
  • 2 eggs
  • 3/4 cup flour
  • 3 -4 cups grated locatelli cheese or 3 -4 cups romano cheese
  • butter (whatever you prefer) or olive oil, for greasing fry pan (whatever you prefer)

Recipe

  • 1 using a wisk and large metal mixing bowl, take 2 eggs and wisk eggs gently into the 1-1/2 cups of water, wisk together for about 30 seconds until well blended.
  • 2 next, wisk in your flour and mix for about another 30 seconds.
  • 3 add about a tablespoon or two of butter to heated fry pan, add about a ladle full of your prepared scapel batter until it covers most of frypan, cook each side for about a minute and a half.
