Mushroom Soup With Spinach And Carrots

Ingredients
- Servings: 4
- 500 g chopped mushrooms (any you like but i used the regular ones)
- 1 medium carrot, cut in small cubes
- 3 medium red potatoes, cut in small cubes
- 3 springs spinach
- 2 tablespoons butter
- 1 medium onion
- 3 garlic cloves
- 2 tablespoons flour
- 2 cups vegetable stock
- 2 cups water
- 1 1/2 cups milk
- salt and plenty pepper
Recipe
- 1 melt butter in pot,.
- 2 saute garlic and onion until almost golden brown.
- 3 add chopped mushrooms.
- 4 saute for a few minutes
- 5 add the flour and mix well.
- 6 add the veg stock.
- 7 add water.
- 8 add cubed potato.
- 9 add shredded spinach.
- 10 add cubed carrot.
- 11 add milk.
- 12 season with salt and pepper.
- 13 bring to boil.
- 14 reduce heat and simmer for 15-20 minutes or until flavors blend.
- 15 let stand for 5 mins,.
- 16 serve with croutons or fav crackers.
- 17 enjoy.
