Pea Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 ounce butter
  • 1 large onion, roughly chopped
  • 1 tablespoon all-purpose flour
  • 1 lb frozen peas
  • 5 1/4 cups vegetable stock or 5 1/4 cups chicken stock
  • 1/2 teaspoon superfine sugar
  • 2 sprigs mint
  • salt and pepper
  • mint leaf, shredded to garnish

Recipe

  • 1 melt the butter in a large saucepan, add the chopped onion and cook very gently stirring occasionally for about 10 mins until soft but not colored.
  • 2 sprinkle in the flour and stir for a further 1-2 mins then add the peas, stock, sugar and mint sprigs.
  • 3 bring to a boil, cover and simmer gently stirring occasionally for about 5 mins or until the peas are soft. do not simmer any longer than this or the peas will lose their fresh green color.
  • 4 remove the mint sprigs and discard. puree the soup in a blender until smooth.
  • 5 return the soup to the rinsed out pan, reheat and add salt and pepper to taste.
  • 6 serve hot garnished with the shredded mint.
