Pea Soup

Ingredients
- Servings: 4
- 1 ounce butter
- 1 large onion, roughly chopped
- 1 tablespoon all-purpose flour
- 1 lb frozen peas
- 5 1/4 cups vegetable stock or 5 1/4 cups chicken stock
- 1/2 teaspoon superfine sugar
- 2 sprigs mint
- salt and pepper
- mint leaf, shredded to garnish
Recipe
- 1 melt the butter in a large saucepan, add the chopped onion and cook very gently stirring occasionally for about 10 mins until soft but not colored.
- 2 sprinkle in the flour and stir for a further 1-2 mins then add the peas, stock, sugar and mint sprigs.
- 3 bring to a boil, cover and simmer gently stirring occasionally for about 5 mins or until the peas are soft. do not simmer any longer than this or the peas will lose their fresh green color.
- 4 remove the mint sprigs and discard. puree the soup in a blender until smooth.
- 5 return the soup to the rinsed out pan, reheat and add salt and pepper to taste.
- 6 serve hot garnished with the shredded mint.
