Potato Soup With Ham And Cheese

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 4 large potatoes (peeled and cut into bite sized pieces)
  • 1 quart water (to cook potatoes in)
  • 1 lb ham (cut into small chunks)
  • 3 cups milk
  • 2 cups cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper flakes
  • 2 tablespoons butter
  • 3 tablespoons flour

Recipe

  • 1 boil potatoes until tender enough to eat but not to soft.
  • 2 drain potatoes and reserve the liquid.
  • 3 in a large pot melt butter.
  • 4 when the butter is melted add the flour and whisk to combine until smooth.
  • 5 add the milk whisking to combine until smooth.
  • 6 add 2 cups of the potato cooking water.
  • 7 add the ham and cook for 5 minutes.
  • 8 add the cheese and stir till melted.
  • 9 add the potatoes, salt, pepper, and red pepper.
  • 10 place on the lowest heat and let set for 5 to 10 minutes for the flavors to blend.
  • 11 serve with crusty bread and maybe a salad.
