Potato Soup With Ham And Cheese

Ingredients
- 4 large potatoes (peeled and cut into bite sized pieces)
- 1 quart water (to cook potatoes in)
- 1 lb ham (cut into small chunks)
- 3 cups milk
- 2 cups cheddar cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon red pepper flakes
- 2 tablespoons butter
- 3 tablespoons flour
Recipe
- 1 boil potatoes until tender enough to eat but not to soft.
- 2 drain potatoes and reserve the liquid.
- 3 in a large pot melt butter.
- 4 when the butter is melted add the flour and whisk to combine until smooth.
- 5 add the milk whisking to combine until smooth.
- 6 add 2 cups of the potato cooking water.
- 7 add the ham and cook for 5 minutes.
- 8 add the cheese and stir till melted.
- 9 add the potatoes, salt, pepper, and red pepper.
- 10 place on the lowest heat and let set for 5 to 10 minutes for the flavors to blend.
- 11 serve with crusty bread and maybe a salad.
