Potato Soup With Smoked Sausage

Ingredients

- 1 lb smoked sausage, chopped
- 2 tablespoons butter
- 3 potatoes, peeled and diced
- 2 stalks celery, chopped
- 3 carrots, chopped
- 1/2 cup diced onion
- 14 ounces corn with juice
- 1 cup water
- 14 ounces evaporated milk
- 1 tablespoon fresh dill or 1 teaspoon dried dill
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Recipe
- 1 in a large saucepan, melt the butter over low heat being careful not to burn it.
- 2 add potatoes, celery, carrots and onions and saute until softened.
- 3 add smoked sausage, corn with juice and water and simmer, covered approximately 30 minutes or until vegetables are tender.
- 4 add evaporated milk, dill, cayenne pepper and salt and pepper and continue to simmer for about 5 minutes.
