Potato Soup

Ingredients
- Servings: 8
- 6 -8 medium potatoes
- 2/3 cup butter
- 2/3 cup flour
- 6 cups milk
- 1 teaspoon salt
- 2 teaspoons pepper
- 12 ounces monterey jack and cheddar cheese blend, shredded
- 10 ounces sour cream
- 1 lb cooked bacon, crumbled
Recipe
- 1 bake potatoes at 400 degrees for 1 hour.
- 2 scoop out the insides into a bowl and set aside.
- 3 in a large pot, melt 2/3 cup butter on low heat.
- 4 add 2/3 cup flour.
- 5 gradually stir in 6 cups of milk and turn heat up to medium.
- 6 add potatoes, salt, pepper, cheese and bacon.
- 7 cook 15 minutes, stirring constantly until all ingredients are incorporated.
- 8 stir in sour cream and serve with warm crusty bread -- or even better in a bread bowl!
