Potato Soup

Total Time: 1 hr 30 mins Preparation Time: 1 hr Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 6 -8 medium potatoes
  • 2/3 cup butter
  • 2/3 cup flour
  • 6 cups milk
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 12 ounces monterey jack and cheddar cheese blend, shredded
  • 10 ounces sour cream
  • 1 lb cooked bacon, crumbled

Recipe

  • 1 bake potatoes at 400 degrees for 1 hour.
  • 2 scoop out the insides into a bowl and set aside.
  • 3 in a large pot, melt 2/3 cup butter on low heat.
  • 4 add 2/3 cup flour.
  • 5 gradually stir in 6 cups of milk and turn heat up to medium.
  • 6 add potatoes, salt, pepper, cheese and bacon.
  • 7 cook 15 minutes, stirring constantly until all ingredients are incorporated.
  • 8 stir in sour cream and serve with warm crusty bread -- or even better in a bread bowl!
