Potato Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 8 -10 potatoes, cut into chunks
  • 1/2 small onion, chopped
  • 1 (12 ounce) can evaporated milk
  • 1 (16 ounce) bag broccoli florets
  • 2 lbs smoked sausage, sliced and quartered
  • 1 lb velveeta cheese, cut into cubes

Recipe

  • 1 in pot, cover potatoes and onion with water, bring to a boil and cook until almost done. add broccoli and cook til tender. drain off 1/2 of the water (or more if you like a thicker soup like we do). remove from heat. add evaporated milk, sausage and cheese. stir until cheese is melted.
