P.r.soup (potato Rice Soup)

Ingredients

  • Servings: 4
  • 1 garlic clove
  • 4 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium potato, peeled and diced
  • 1 cup rice, uncooked
  • 2 cups chicken broth
  • 2 -4 cups water
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon parmesan cheese, grated

Recipe

  • 1 heat oil in a pot and saute garlic until golden brown.
  • 2 add onion, potato, rice, broth, parsley, and 2 cups water.
  • 3 stir, bring to a boil, reduce heat and simmer for 1 hour, stirring occasionally.
  • 4 add more water if soup appears too thick.
  • 5 stir in cheese and serve.
