Gazpacho

Ingredients

  • Servings: 8
  • 4 cups tomato juice (can also use v8, clamato, or a mix of these)
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • 2 tablespoons lemon juice
  • 1 dash worcestershire sauce (optional)
  • salt (to taste)
  • pepper (to taste)
  • 1 -2 garlic clove, minced fine (to taste)
  • 3 -4 tomatoes, peeled, seeded and chopped fine
  • 1 cucumber, peeled, seeded and chopped fine
  • 1/4 red onion, chopped fine
  • 6 radishes, chopped fine
  • 1 avocado, cut into small cubes (optional)

Recipe

  • 1 mix all ingredients in a large, non-reactive container.
  • 2 store in the refrigerator.
