Green Pea And Potato Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups frozen peas
  • 3 medium potatoes, peeled and chopped into quarters
  • 3 cups chicken stock
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 1/4 cup grated parmesan cheese
  • salt and pepper

Recipe

  • 1 heat oil in a large saucepan, add onion and garlic, cook, stirring until the onion is soft.
  • 2 pour the chicken stock into the saucepan with the onion and garlic and bring to the boil.
  • 3 add the potatoes, boil uncovered for 5 minutes.
  • 4 stir in the peas, bring to the boil and cook for a further 5 minutes or until the chopped potatoes are tender.
  • 5 blend potato and pea mixture in batches until smooth.
  • 6 serve soup with sprinkled with parmesan cheese.
