Potato Soup

Ingredients
- Servings: 6
- 8 -10 potatoes, cut into chunks
- 1/2 small onion, chopped
- 1 (12 ounce) can evaporated milk
- 1 (16 ounce) bag broccoli florets
- 2 lbs smoked sausage, sliced and quartered
- 1 lb velveeta cheese, cut into cubes
Recipe
- 1 in pot, cover potatoes and onion with water, bring to a boil and cook until almost done. add broccoli and cook til tender. drain off 1/2 of the water (or more if you like a thicker soup like we do). remove from heat. add evaporated milk, sausage and cheese. stir until cheese is melted.
