Potato Soup

Ingredients

- 5 lbs potatoes
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon celery seed
- 1 teaspoon crushed rosemary
- 1 garlic clove, minced
- 1 small onion, minced
- about 2 cups milk
- 2 tablespoons cornstarch
- 2 tablespoons butter
Recipe
- 1 peel and dice potatoes into bite sizes. in a large pot put the potatoes in and then fill with enough water to just cover the potatoes. set aside.
- 2 in a skillet, saute the garlic and onion for 3-5 minutes to soften.
- 3 add the garlic and onion to the potatoes. then add the salt, pepper, celery seed, and rosemary.
- 4 boil potatoes over high heat until potatoes are fork-tender.
- 5 in a mixing bowl combine the milk with the cornstarch until the cornstarch dissolves.
- 6 once the potatoes are soft, lower the heat to medium and add the milk mixture and the butter. if it needs a little more milk, add some. you want it to be a creamy, milky color-- not watery. stir well until it thickens and then serve!
