Smoked Sausage Surprise

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs smoked sausage (or polska kielbasa, cut into 1/2 thick slices)
  • 1/2 large sweet onion (minced)
  • 3 -4 large potatoes (peeled and cut into bite size pieces)
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1.5 (10 1/2 ounce) cans water (use soup can)
  • 1 (6 ounce) can mushroom stems and pieces (well drained)
  • salt & fresh ground pepper
  • 1 teaspoon thyme
  • 1/2 teaspoon dill weed
  • 2 teaspoons olive oil
  • 8 ounces frozen corn

Recipe

  • 1 in large skillet (preferably non-stick) over med high heat add olive oil and bring to smoke point.
  • 2 add onions and let cook just until starting to brown, add potatoes.
  • 3 when potato edges are browned add soup and water and spices. return to boil and add mushrooms, sausage, and corn.
  • 4 reduce heat to med low and allow liquids to reduce to 1/2 (liquid should thicken and turn a med brown in color.
  • 5 serve with tossed salad and crusty bread for a delicious and quick meal.
  • 6 ps my fussy grandkids call this "grandpas' supper" and it's all they want when they eat at my place.
