Portuguese Caldo Verde

Ingredients

- 1 lb kale
- 1/3 lb dried small beans, soaked in water overnight and drained
- 1/2 cup olive oil
- 3 medium onions, peeled and thinly sliced
- 3 quarts chicken stock
- 1/2 lb linguica sausage (portuguese sausage)
- 1/2 lb potato, peeled and grated
- salt and pepper
Recipe
- 1 remove the large ribs of the kale and slice the leaves into very thin strips, as thin as possible.
- 2 place in a bowl of cold water for 1 hour. drain well.
- 3 in a 8 qt soup pot, saute the onions in the olive oil.
- 4 add the kale, chicken stock and remaining ingredients, including the drained beans.
- 5 simmer for 1 1/2 hours, covered.
- 6 taste for salt and pepper before serving.
