Ingredients

- 4 roma tomatoes, deseeded
- 1 medium yellow pepper
- 1 english cucumber
- 4 shallots, finely diced
- 4 celery ribs
- 1/3 cup olive oil
- 2 cups vegetable broth
- 1 (1 1/2 liter) can tomato juice
Recipe
- 1 finely dice vegetables; place in a large bowl.
- 2 stir together olive oil, vegetable broth and tomato juice.
- 3 mix with vegetables, season with salt and pepper, and allow to chill for at least 2 hours before serving.
