Gazpacho

Ingredients

  • Servings: 6
  • 4 roma tomatoes, deseeded
  • 1 medium yellow pepper
  • 1 english cucumber
  • 4 shallots, finely diced
  • 4 celery ribs
  • 1/3 cup olive oil
  • 2 cups vegetable broth
  • 1 (1 1/2 liter) can tomato juice

Recipe

  • 1 finely dice vegetables; place in a large bowl.
  • 2 stir together olive oil, vegetable broth and tomato juice.
  • 3 mix with vegetables, season with salt and pepper, and allow to chill for at least 2 hours before serving.
