Pinto Tortilla Soup - Vince Seeley

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 1
  • 1 tablespoon butter
  • 1/2 chopped onion (cup)
  • 1 teaspoon minced garlic
  • 3 water (cup)
  • 1 salsa, i used black bean and corn thick (container) or 1 chunky salsa (container)
  • 2 (14 ounce) pinto beans with liquid, i used a quart of pinto beans i had canned
  • 1/2 chopped red pepper (cup)
  • 1 bay leaf
  • 2 tablespoons , instant veggie stock mix
  • 1/4 teaspoon pepper

Recipe

  • 1 garnish.
  • 2 tortilla strips fried in oil till crispy.
  • 3 grated cheese.
  • 4 melt butter in pot, saute' onion and garlic until soft. add next 7 ingredients. bring to a boil then reduce heat and simmer 1 hours.
  • 5 remove bay leaf before serving.
  • 6 garnish with strips and cheese.
