Pinto Tortilla Soup - Vince Seeley

Ingredients
- Servings: 1
- 1 tablespoon butter
- 1/2 chopped onion (cup)
- 1 teaspoon minced garlic
- 3 water (cup)
- 1 salsa, i used black bean and corn thick (container) or 1 chunky salsa (container)
- 2 (14 ounce) pinto beans with liquid, i used a quart of pinto beans i had canned
- 1/2 chopped red pepper (cup)
- 1 bay leaf
- 2 tablespoons , instant veggie stock mix
- 1/4 teaspoon pepper
Recipe
- 1 garnish.
- 2 tortilla strips fried in oil till crispy.
- 3 grated cheese.
- 4 melt butter in pot, saute' onion and garlic until soft. add next 7 ingredients. bring to a boil then reduce heat and simmer 1 hours.
- 5 remove bay leaf before serving.
- 6 garnish with strips and cheese.
