Melissa's Chicken Tortilla Soup

Total Time: 4 hrs 5 mins Preparation Time: 5 mins Cook Time: 4 hrs

Ingredients

  • Servings: 10
  • 2 -3 lbs frozen chicken breasts
  • 1 (32 ounce) carton chicken broth
  • 2 (14 1/2 ounce) cans diced tomatoes with juice (can also use rotel brand for a more spicy version)
  • 1 (14 1/2 ounce) can tomato sauce
  • 1 large onion, diced
  • 2 (12 ounce) bags frozen corn
  • 1 (15 ounce) can black beans, with juice
  • 1 (15 ounce) can black beans, drained
  • 1 bunch of chopped green onion
  • 3 garlic cloves, chopped
  • cayenne pepper
  • chili powder

Recipe

  • 1 put all ingredients in a crock pot and cook on high for 4 hours.
  • 2 30 minutes to 1 hr prior to serving, remove chicken and shred; then add back to the soup.
  • 3 serve with corn tortilla chips.
