- 3 cups boiling water
- 1/2 teaspoon kosher salt
- 3 cups frozen peas
- 1/2-1 teaspoon lime juice
- 2 scallions
- 4 tablespoons prepared basil pesto
Recipe
- 1 combine water, salt, peas, lime juice and scallions in a saucepan. bring to a simmer and cook until peas are tender, 3-5 minutes. remove scallions and discard.
- 2 transfer soup to a blender. add pesto and process until smooth. serve hot.
