Potato Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 5 lbs potatoes
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery seed
  • 1 teaspoon crushed rosemary
  • 1 garlic clove, minced
  • 1 small onion, minced
  • about 2 cups milk
  • 2 tablespoons cornstarch
  • 2 tablespoons butter

Recipe

  • 1 peel and dice potatoes into bite sizes. in a large pot put the potatoes in and then fill with enough water to just cover the potatoes. set aside.
  • 2 in a skillet, saute the garlic and onion for 3-5 minutes to soften.
  • 3 add the garlic and onion to the potatoes. then add the salt, pepper, celery seed, and rosemary.
  • 4 boil potatoes over high heat until potatoes are fork-tender.
  • 5 in a mixing bowl combine the milk with the cornstarch until the cornstarch dissolves.
  • 6 once the potatoes are soft, lower the heat to medium and add the milk mixture and the butter. if it needs a little more milk, add some. you want it to be a creamy, milky color-- not watery. stir well until it thickens and then serve!
