Fresh Corn Chowder

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 2 large onions, minced
  • 1 large green pepper, diced
  • 4 cups corn kernels
  • 2 large potatoes, peeled and diced
  • 1/4 cup minced fresh parsley
  • 1/4 cup flour
  • 4 cups milk
  • 2 cups heavy cream (35%)
  • salt and pepper
  • tabasco sauce

Recipe

  • 1 melt butter in soup pot.
  • 2 cook onions and peppers over low heat until soft, 7 to 10 minutes.
  • 3 add corn.
  • 4 cook 4 to 5 minutes more.
  • 5 stir in potatoes and parsley, cook 3 minutes more.
  • 6 whisk flour with a little milk.
  • 7 stir into soup.
  • 8 add remaining milk and cream.
  • 9 bring to a boil.
  • 10 cover and reduce heat, simmer for 45 minutes, stirring often.
  • 11 season to taste with salt, pepper and tabasco.
  • 12 serve immediately.
