Mushroom Soup With Spinach And Carrots

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 500 g chopped mushrooms (any you like but i used the regular ones)
  • 1 medium carrot, cut in small cubes
  • 3 medium red potatoes, cut in small cubes
  • 3 springs spinach
  • 2 tablespoons butter
  • 1 medium onion
  • 3 garlic cloves
  • 2 tablespoons flour
  • 2 cups vegetable stock
  • 2 cups water
  • 1 1/2 cups milk
  • salt and plenty pepper

Recipe

  • 1 melt butter in pot,.
  • 2 saute garlic and onion until almost golden brown.
  • 3 add chopped mushrooms.
  • 4 saute for a few minutes
  • 5 add the flour and mix well.
  • 6 add the veg stock.
  • 7 add water.
  • 8 add cubed potato.
  • 9 add shredded spinach.
  • 10 add cubed carrot.
  • 11 add milk.
  • 12 season with salt and pepper.
  • 13 bring to boil.
  • 14 reduce heat and simmer for 15-20 minutes or until flavors blend.
  • 15 let stand for 5 mins,.
  • 16 serve with croutons or fav crackers.
  • 17 enjoy.
