Fresh Corn Chowder

Ingredients
- Servings: 6
- 1/4 cup butter
- 2 large onions, minced
- 1 large green pepper, diced
- 4 cups corn kernels
- 2 large potatoes, peeled and diced
- 1/4 cup minced fresh parsley
- 1/4 cup flour
- 4 cups milk
- 2 cups heavy cream (35%)
- salt and pepper
- tabasco sauce
Recipe
- 1 melt butter in soup pot.
- 2 cook onions and peppers over low heat until soft, 7 to 10 minutes.
- 3 add corn.
- 4 cook 4 to 5 minutes more.
- 5 stir in potatoes and parsley, cook 3 minutes more.
- 6 whisk flour with a little milk.
- 7 stir into soup.
- 8 add remaining milk and cream.
- 9 bring to a boil.
- 10 cover and reduce heat, simmer for 45 minutes, stirring often.
- 11 season to taste with salt, pepper and tabasco.
- 12 serve immediately.
