Potato Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 4 large potatoes, sliced
  • 2 medium onions, sliced thin
  • 1 quart milk, hot
  • 1 tablespoon bacon drippings
  • 1 teaspoon salt, pepper
  • parsley

Recipe

  • 1 in a large saucepan add the onions and potatoes.
  • 2 cover with boiling, salted water.
  • 3 cook until the vegetables are tender.
  • 4 drain and reserve the water.
  • 5 mash the potatoes; add the bacon drippings and seasoning.
  • 6 add hot milk gradually and blend well.
  • 7 if too thick, you can thin with potato water or hot milk.
