Lea's Cheesy Potato Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 tablespoon real butter
  • 1 small onion
  • 1 garlic clove
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon basil
  • 4 tablespoons flour
  • 3 cups chicken broth
  • 1/4 cup bacon bits
  • 1 lb red potatoes, cubed
  • 1 (8 ounce) bag frozen corn
  • 1 cup sour cream
  • 4 ounces cheddar cheese

Recipe

  • 1 in small bowl combine flour, salt, basil, and pepper.
  • 2 in large pot sauté onion and garlic in butter. then stir in the flour mixture, be sure to mix well.
  • 3 gradually add chicken broth and bring to a boil. let boil for approx 2 minutes and then add the cubed potatoes, corn, and bacon bits.
  • 4 let cook together until potatoes are fully cooked and falling apart.
  • 5 then mix in the sour cream and cheddar cheese. let simmer another 10 minutes or until cheese is melted.
  • 6 serve garnished with chives if desired!
