Mom's Gazpacho

Ingredients

  • Servings: 6
  • 4 tomatoes, skinned
  • 2 green peppers
  • 2 medium onions
  • 1 garlic clove
  • 3/4 cup tomato juice
  • 2 cucumbers
  • 1/4 cup vinegar
  • 1/4 cup olive oil
  • salt, to taste
  • pepper, to taste
  • crouton, to garnish

Recipe

  • 1 puree 1 onion, 1 green pepper, 1 cucumber, 1 clove garlic and 4 tomatoes in a blender.
  • 2 in a very big bowl, mix together oil, vinegar, tomato juice, salt and pepper. add the mixture in the blender to this and blend well.
  • 3 chop remaining onion, cucumber, and green pepper. serve this on top of each bowl of soup and garnish with croutons.
  • 4 serve ice cold.
