Jim's Veggie Casserole

Ingredients

  • Servings: 8
  • 2 cups frozen green beans
  • 1 (10.75 ounce) can cream of celery soup
  • 1 cup sour cream
  • 1 cup frozen shoepeg corn
  • 1 (8 ounce) package shredded cheddar cheese
  • 1 (4 ounce) can sliced water chestnuts, drained
  • 1 teaspoon lemon juice
  • topping:
  • 1 sleeve buttery round crackers (such as ritz®), crushed
  • 1/4 cup butter, melted

    Preparation Time: 10 mins Cook Time: 45 mins Ready Time: 55 mins

  • preheat oven to 350 degrees f (175 degrees c).
  • mix green beans, celery soup, sour cream, shoepeg corn, cheddar cheese, water chestnuts, and lemon juice together in a bowl; spread into a casserole dish.
  • mix crackers and butter together in a bowl; sprinkle over the casserole.
  • bake in preheated oven until hot and bubbly, about 45 minutes.
