Garden Fresh Tomato Basil Soup

Ingredients

- 4 cups fresh tomatoes, chopped
- 1 onion, diced
- 1 pinch ground cloves
- 2 cups chicken broth
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- 2 teaspoons sugar, to taste
- 1/2 cup fresh basil leaf
- 1/8 cup red wine
Recipe
- 1 1. in a stockpot combine tomatoes, onion, cloves, and chicken brother. bring to boil and simmer for 20 minutes. remove from heat, add basil and wine and process in food processor.
- 2 2. in the empty stockpot, melt butter and in flour to make a roux. cook roux slowly until medium brown. gradually whisk in a bit of tomato mixture, then stir in the rest. season with sugar and salt to taste.
