Green Pea Soup

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 12 scallions, coarsely chopped
  • 1 potato, diced
  • 1 garlic clove, crushed
  • 12 ounces frozen peas
  • 3 1/4 cups chicken stock
  • 6 ounces frozen peas
  • 5 ounces heavy cream
  • salt
  • pepper

Recipe

  • 1 melt butter in a large sauce pan.
  • 2 add scallions, potato and garlic then cover and cook over low heat for 10 minute.
  • 3 add peas, stock, salt and pepper to taste bring to a boil and simmer 15 minute.
  • 4 remove from heat and puree until liquefied.
  • 5 reheat and add remaining peas.
  • 6 cook until peas are just tener and add cream.
  • 7 season to taste with salt and pepper if necessary.
