Skillet Beef Enchiladas

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 lb ground round (or ground turkey)
  • 1/2 cup onion, chopped
  • 2 tablespoons green chilies, chopped
  • 1 (10 1/2 ounce) can cream of mushroom soup, condensed
  • 1 (10 ounce) can enchilada sauce
  • 1/2 cup milk
  • 12 corn tortillas
  • 3 cups cheese, shredded

Recipe

  • 1 brown meat and onion in large skillet. drain fat.
  • 2 stir in chilies, cream of mushroom soup, enchilada sauce, and milk. bring to a boil and then simmer for 20 minutes.
  • 3 soften tortillas in the microwave wrapped in paper towels.
  • 4 place grated cheese inside each tortilla and roll up.
  • 5 place tortillas in sauce in skillet and spoon sauce over tortillas. top with any remaining cheese.
  • 6 cover and heat on medium for 5 minutes.
