"healthy" Cream Of Fire-roasted Tomato Soup

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 medium red onion, chopped
- 2 celery ribs, chopped
- 2 medium carrots, chopped
- 2 teaspoons garlic, chopped
- 3 cups chicken broth
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (14 1/2 ounce) can diced tomatoes, fire-roasted
- 1 tablespoon basil
- 1/2 teaspoon marjoram
- 1/4 teaspoon pepper
- 1/3 cup 2% low-fat milk
Recipe
- 1 heat olive oil in large pot over medium heat.
- 2 add onions, celery, carrots, garlic to pot and saute for about 5-6 minutes.
- 3 add chicken broth, tomatoes, basil and marjoram to the vegetables.
- 4 bring to a boil, reduce heat and cook on medium heat for about 20 minutes or until carrots are tender.
- 5 puree vegetables in blender until smooth.
- 6 return to pot and add milk and pepper. (add salt to taste if you require more).
- 7 serve. you may garnish with fresh herbs or a dollop of sour cream.
