"healthy" Cream Of Fire-roasted Tomato Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium red onion, chopped
  • 2 celery ribs, chopped
  • 2 medium carrots, chopped
  • 2 teaspoons garlic, chopped
  • 3 cups chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 (14 1/2 ounce) can diced tomatoes, fire-roasted
  • 1 tablespoon basil
  • 1/2 teaspoon marjoram
  • 1/4 teaspoon pepper
  • 1/3 cup 2% low-fat milk

Recipe

  • 1 heat olive oil in large pot over medium heat.
  • 2 add onions, celery, carrots, garlic to pot and saute for about 5-6 minutes.
  • 3 add chicken broth, tomatoes, basil and marjoram to the vegetables.
  • 4 bring to a boil, reduce heat and cook on medium heat for about 20 minutes or until carrots are tender.
  • 5 puree vegetables in blender until smooth.
  • 6 return to pot and add milk and pepper. (add salt to taste if you require more).
  • 7 serve. you may garnish with fresh herbs or a dollop of sour cream.
