Mini Chilled Gazpacho, Tapas

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • 1 (14 ounce) can plum tomatoes
  • 1 cucumber
  • 1 small green bell pepper, deseeded
  • 1/2 onion, peeled
  • 1 tablespoon wine vinegar
  • 1/3 cup olive oil

Recipe

  • 1 roughly chop tomatoes, half the cucumber, pepper and onion.
  • 2 blend until smooth.
  • 3 stir in vinegar and oil, taste and season with salt and pepper. add more vinegar if needed to taste.
  • 4 chill for two hours.
  • 5 cut the remaining half of cucumber into sticks.
  • 6 serve in mini glasses with a stick of cucumber.
