Not Just Another Cream Of Mushroom Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 8 ounces fresh mushrooms
  • 4 tablespoons butter
  • 1 medium onion, chopped
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (10 3/4 ounce) can condensed chicken broth
  • 1 3/4 cups water
  • 1 cup half-and-half
  • snipped parsley (optional)

Recipe

  • 1 slice enough mushrooms to measure 1 cup.
  • 2 chop remaining mushrooms.
  • 3 cook and stir sliced mushrooms in 2 tbls of butter in a 3qt.
  • 4 saucepan over low heat until golden brown.
  • 5 remove with slotted spoon.
  • 6 cook and stir chopped mushrooms and onion in remaining butter until onion is tender.
  • 7 stir in flour, salt and pepper.
  • 8 cook over low heat stirring constantly, about 1 minute then remove from heat.
  • 9 stir in broth and water.
  • 10 heat to a boil, stirring constantly.
  • 11 boil and stir for 1 minute.
  • 12 stir in half-and-half and sliced mushrooms.
  • 13 garnish with parsley (opt).
