Not Your Momma's Chicken Soup

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • cooking spray
  • 1 lb boneless skinless chicken breast, diced
  • 1 large onion, thinly sliced
  • 1 red bell pepper, diced
  • 2 garlic cloves
  • 3 cups chicken broth
  • 1/4 cup soy sauce
  • 9 ounces frozen spinach
  • 15 ounces chickpeas, drained & rinsed
  • 13 ounces light coconut milk
  • 1 teaspoon dried ginger
  • 1/4 cup cilantro, chopped

Recipe

  • 1 coat the inside of a dutch oven with spray oil.
  • 2 heat over medium high heat and cook chicken until light browned, about 8-10 minutes.
  • 3 remove chicken from pan and set aside.
  • 4 add onions, bell peppers, and garlic to pan and saute for just a few minutes until the ingredients are tender crisp.
  • 5 return the chicken to the pan and add the chicken broth and soy sauce.
  • 6 bring to a boil, reduce heat and simmer covered for about 15 minutes.
  • 7 add spinach, chickpeas, coconut milk and ginger.
  • 8 simmer for an additional 10 minutes or until heated through.
  • 9 add cilantro and serve.
