Not Your Momma's Chicken Soup

Ingredients

- 1 lb boneless skinless chicken breast, diced
- 1 large onion, thinly sliced
- 1 red bell pepper, diced
- 2 garlic cloves
- 3 cups chicken broth
- 1/4 cup soy sauce
- 9 ounces frozen spinach
- 15 ounces chickpeas, drained & rinsed
- 13 ounces light coconut milk
- 1 teaspoon dried ginger
- 1/4 cup cilantro, chopped
Recipe
- 1 coat the inside of a dutch oven with spray oil.
- 2 heat over medium high heat and cook chicken until light browned, about 8-10 minutes.
- 3 remove chicken from pan and set aside.
- 4 add onions, bell peppers, and garlic to pan and saute for just a few minutes until the ingredients are tender crisp.
- 5 return the chicken to the pan and add the chicken broth and soy sauce.
- 6 bring to a boil, reduce heat and simmer covered for about 15 minutes.
- 7 add spinach, chickpeas, coconut milk and ginger.
- 8 simmer for an additional 10 minutes or until heated through.
- 9 add cilantro and serve.
