Poblano Chicken & Corn Chowder

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 (12 1/2 ounce) cans chicken meat packed in water
  • 2 large baking potatoes
  • 2 cups frozen corn kernels
  • 1/8 cup onion, diced
  • 1/8 cup bell pepper, diced
  • 1/2 cup poblano pepper, diced
  • 1 chicken bouillon cube
  • 2 cups chicken broth
  • 2 cups heavy cream
  • 2 cups milk
  • 2 teaspoons sugar
  • 2 teaspoons hot sauce

Recipe

  • 1 cook and dice the baking potatoes.
  • 2 bring the chicken stock to a boil in a large pot.
  • 3 drain the canned chicken and add to the pot.
  • 4 add all other ingredients except for hot sauce, let simmer for 40 minutes.
  • 5 add hot sauce and simmer 5 more minutes.
