Potato Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb potato
  • 1/2 cup butter
  • 2 chopped onions
  • 3 slices bacon
  • 1 1/2 quarts chicken broth
  • 1 bay leaf
  • heavy cream (optional)
  • salt and pepper

Recipe

  • 1 melt the butter in a large pot. fry the bacon and onions in butter. cook until onions are clear.
  • 2 add potatoes to the pot. cover with chicken broth. add bay leaf. boil until potatoes fal apart.
  • 3 use an immersion blender in mistre until smooth.
  • 4 add cream and salt and pepper to taste.
