Lentil Soup

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 2 smoked ham hocks
  • 2 large onions
  • 1 lb lentils, washed (non processed)
  • 1 ounce paprika
  • salt and pepper
  • 1/8 teaspoon thyme
  • water
  • 1 carrot, cut into pieces
  • 1 lb polish sausage, cut into pieces

Recipe

  • 1 place ham hocks in large kettle and heat gently to render some fat.
  • 2 add onions and cook until golden brown.
  • 3 add lentils and carrot.
  • 4 stir.
  • 5 add enough water to cover.
  • 6 add paprika,salt and pepper.
  • 7 bring to a boil,stir and cover.
  • 8 turn off the heat and let stand for an hour or more.
  • 9 reheat and stir.
  • 10 again add water to cover and cook gently until lentils begin to disintergrate.
  • 11 cook sausage in the soup and add thyme.
  • 12 serve hot.
