Lentil Cauliflower Soup

Ingredients

- 1 tablespoon olive oil
- 1/2 onion, chopped
- 1 carrot, finely chopped
- 1 stalk celery, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 4 cups chicken broth
- 1/2 cup green lentil, rinsed well
- 1 1/2 cups cauliflower, chopped into small florets
- 2 tablespoons fresh parsley

Recipe
- 1 heat olive oil over medium heat.
- 2 add onion, carrots and celery. cook for 3-4 minutes or until softened.
- 3 add garlic, cumin and tumeric and cook until fragrant, about 30 seconds.
- 4 add broth and lentils, bring to a boil and reduce to a simmer for 40 minutes or until lentils are cooked.
- 5 using a potato masher, break up about half the soup. add cauliflower and cook for 8 minutes or until tender.
- 6 stir in fresh parsley and pepper.
- 7 garnish with fresh chives.
