Lettuce Soup

Ingredients
- 2 tablespoons butter or 2 tablespoons margarine
- 2 tablespoons finely chopped onions
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3 cups chicken stock
- 4 cups shredded head lettuce, firmly packed
- 1 cup rich creamy milk
Recipe
- 1 melt butter in large saucepan.
- 2 add onion and sauté until soft and clear.
- 3 mix in flour, salt and pepper.
- 4 stir in chicken stock until it boils and thickens slightly.
- 5 add lettuce. simmer for about 3 minutes.
- 6 add creamy milk. heat through.
- 7 one thing i do different then the original recipe is i like to blend the soup just before serving with a hand blender until i get the consistency i like. careful when doing this because it is very hot!
