Lettuce Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 tablespoons finely chopped onions
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 cups chicken stock
  • 4 cups shredded head lettuce, firmly packed
  • 1 cup rich creamy milk

Recipe

  • 1 melt butter in large saucepan.
  • 2 add onion and sauté until soft and clear.
  • 3 mix in flour, salt and pepper.
  • 4 stir in chicken stock until it boils and thickens slightly.
  • 5 add lettuce. simmer for about 3 minutes.
  • 6 add creamy milk. heat through.
  • 7 one thing i do different then the original recipe is i like to blend the soup just before serving with a hand blender until i get the consistency i like. careful when doing this because it is very hot!
