Mum's Lentil Soup

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 250 g red lentils
  • 4 large carrots
  • 1 medium onion
  • 4 ham stock cubes
  • water

Recipe

  • 1 peel and grate the carrots. finely chop the onion.
  • 2 put everything in a large pan and fill it with enough water to cover the lentils and veg.
  • 3 bring to the boil then simmer for about 30mins-1hour (until the lentils are cooked).
  • 4 blitz with a hand blender if a smooth texture is required.
  • 5 season with salt and pepper and serve with buttered rolls!
