Low Fat Gazpacho With Twang!

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 (14 1/2 ounce) can diced tomatoes with onion and garlic (undrained and cold)
  • 1 cup vegetable juice (cold)
  • 3/4 cup peeled and seeded cucumber, chopped
  • 1/2 cup green pepper, chopped
  • 1/3 cup green onion, chopped
  • 1 tablespoon red wine vinegar
  • 1 -3 garlic clove, minced
  • 1/8 teaspoon hot sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 12 fat free croutons

Recipe

  • 1 mix the first 11 ingredients together in a bowl.
  • 2 check the consistency, adding a tiny bit more vegetable juice if you prefer it thinner.
  • 3 let chill for 30 minutes to 2 hours.
  • 4 ladle 1 cup soup into a bowl and top with 3 croutons.
