Marcia's Potato Soup

Ingredients
- Servings: 8
- 1 medium yellow onion, chopped
- 2 -3 tablespoons butter
- 2 cups shredded carrots
- 3 cups frozen corn
- 1 -2 cup broccoli floret, cut into small pieces
- 3/4 cup water
- 3 (10 1/2 ounce) cans cream of potato soup
- 5 cups milk (approximately- i just measure 3 cans of soup with milk)
- 2 cups cheddar cheese
- 1 cup monterey jack cheese
Recipe
- 1 saute onion in butter, add shredded carrots, corn and broccoli.
- 2 add water and bring to a boil. cover and simmer for 10 minutes (or until everything is soft).
- 3 add potato soup and milk.
- 4 heat until warm then add cheese.
- 5 enjoy!
