Marcia's Potato Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 medium yellow onion, chopped
  • 2 -3 tablespoons butter
  • 2 cups shredded carrots
  • 3 cups frozen corn
  • 1 -2 cup broccoli floret, cut into small pieces
  • 3/4 cup water
  • 3 (10 1/2 ounce) cans cream of potato soup
  • 5 cups milk (approximately- i just measure 3 cans of soup with milk)
  • 2 cups cheddar cheese
  • 1 cup monterey jack cheese

Recipe

  • 1 saute onion in butter, add shredded carrots, corn and broccoli.
  • 2 add water and bring to a boil. cover and simmer for 10 minutes (or until everything is soft).
  • 3 add potato soup and milk.
  • 4 heat until warm then add cheese.
  • 5 enjoy!
