Easy Peasy Butternut Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 large butternut squash
  • 125 g butter
  • milk
  • 1 pinch nutmeg
  • salt and pepper
  • cream (optional)

Recipe

  • 1 peel and deseed butternut.
  • 2 cut butternut into cubes and boil until tender.
  • 3 mash butternut or liquidise in food processor.
  • 4 melt about butter in a pot.
  • 5 pour butternut into the pot, and add milk to thin it out.
  • 6 add salt, pepper and nutmeg.
  • 7 stir well, cover and let simmer for 10 minutes.
  • 8 serve with a dollop of cream (optional).
