Portuguese Bean Soup

Total Time: 2 hrs 40 mins Preparation Time: 10 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 4
  • 1 cup dried red kidney beans
  • 3 onions, chopped
  • 2 garlic cloves, minced
  • 1/4 cup bacon fat
  • 6 small potatoes, diced
  • 1 (5 1/2 ounce) can tomato paste
  • 2 quarts water
  • 2 bay leaves
  • 1 teaspoon allspice
  • salt and pepper

Recipe

  • 1 soak and boil the beans until they just start to soften (1.5 hours or so).
  • 2 saute onions and garlic in fat until slightly brown.
  • 3 add everything else except salt (salt will keep your beans from softening). bring to boil, cover and simmer for 1 hour.
  • 4 salt just before serving.
