Mushroom Soup (sour)

Ingredients
- Servings: 4
- 1 lb fresh mushrooms (not canned or jared)
- 1 quart water
- 1 tablespoon butter
- sauerkraut juice (from bobalky, if made)
- salt
- pepper
- 1 teaspoon flour
- 1 teaspoon finely chopped onion
- 1/4 cup water
Recipe
- 1 wash mushrooms and cook in water until tender.
- 2 strain, reserving water.
- 3 chop mushrooms.
- 4 add sauerkraut juice, salt, and pepper to water (to taste).
- 5 return to a boil.
- 6 brown flour in butter until light brown.
- 7 add onion and saute until brown.
- 8 add 1/4 cup water and bring to a boil.
- 9 strain and add to mushroom water along with the mushrooms.
- 10 simmer until everything is at serving temperature.
- 11 serve with bobalky.
