Mushroom Soup (sour)

Total Time: 1 hr 30 mins Preparation Time: 45 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb fresh mushrooms (not canned or jared)
  • 1 quart water
  • 1 tablespoon butter
  • sauerkraut juice (from bobalky, if made)
  • salt
  • pepper
  • 1 teaspoon flour
  • 1 teaspoon finely chopped onion
  • 1/4 cup water

Recipe

  • 1 wash mushrooms and cook in water until tender.
  • 2 strain, reserving water.
  • 3 chop mushrooms.
  • 4 add sauerkraut juice, salt, and pepper to water (to taste).
  • 5 return to a boil.
  • 6 brown flour in butter until light brown.
  • 7 add onion and saute until brown.
  • 8 add 1/4 cup water and bring to a boil.
  • 9 strain and add to mushroom water along with the mushrooms.
  • 10 simmer until everything is at serving temperature.
  • 11 serve with bobalky.
