Patrick's Cheesy Ham & Potato Soup

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 3 russet potatoes, diced
  • 1/2 cup celery, chopped
  • 1/3 cup onion, chopped
  • 1 lb ham, diced
  • 2 cups water
  • 1 lb cheddar cheese, grated (about 1 stick)
  • 1 chicken bouillon cube
  • 1/2 cup carrot, chopped
  • 5 teaspoons butter
  • 5 teaspoons flour
  • 2 cups milk
  • salt and pepper

Recipe

  • 1 in a large stock pot, mix potatoes, carrots, onion, celery and water. bring to a boil over high heat.
  • 2 add bouillon, salt and pepper.
  • 3 in another small saucepan, melt the butter over medium low heat. whisk in flower until thick, then slowly add milk until heated through.
  • 4 add ham, butter-flour mixture, and cheese to the soup and simmer over medium heat one hour.
  • 5 serve with a thick, crusty bread. enjoy!
